Most shoulder tender is seldom used muscle in the shoulder. This muscle requires skilled craftsman to extract it from the chuck. It is second only to the tenderloin when it comes to tenderness but it has a much better flavor than a tenderloin or filet.
The shoulder tender is not at all heavy or fatty, and has the flavor to stand on its own without marinating or heavy seasonings. For example you can rub some salt and garlic on top and coated in just a few fresh herbs to give the steak a vibrant flavor without weighing it down.
It is also suitable for Chinese cuisine, such as stir-fried, hot pot or slow stew.
